Gnocchi with Caramelized Onion and Sage Brown Butter

Ingredients:

For the Gnocchi:

  • 1 cup all-purpose flour
  • 1/4 cup grated Parmesan cheese
  • 1 egg, lightly beaten
  • Salt, to taste
  • 1 cup ricotta cheese

For the Caramelized Onion and Sage Brown Butter:

  • 1 large onion, thinly sliced
  • 2 tablespoons unsalted butter
  • 2 sage leaves, chopped
  • Salt and pepper, to taste

Instructions:

  1. Mix the flour, Parmesan cheese, egg, and ricotta cheese. Season with salt.
  2. Divide the mixture into 4 equal parts and roll each into a long rope. Cut into 1-inch pieces to form gnocchi.
  3. Boil the gnocchi in salted water until they float. Remove with a slotted spoon and set aside.
  4. Caramelize the onions in butter until golden brown. Stir in chopped sage.
  5. Toss the cooked gnocchi with caramelized onion and sage brown butter. Season with salt and pepper to taste.
